The Domaine Simonin Pouilly-FuissĂ© “Les Charmes” is produced by the small, family-run Domaine Simonin estate in the MĂąconnais region of Burgundy, where around seven hectares of Chardonnay are cultivated using traditional vineyard practices. The wine comes from the “Les Charmes” climat, a well-regarded site planted on limestone and clay soils that provide excellent drainage and contribute to the wine’s mineral character and balance. The estate focuses on careful vineyard management to preserve fruit purity and express the terroir of Pouilly-FuissĂ©.

Made from 100% Chardonnay, the grapes are gently pressed and fermented in a combination of stainless-steel tanks and oak barrels to retain freshness while adding texture and complexity. The wine is typically aged on its fine lees for around 10–12 months, sometimes with bĂątonnage, which enhances richness and mouthfeel before bottling.
