Domaine Simonin Pouilly-Fuisse 'Les Charmes'
The Domaine Simonin Pouilly-FuissĂ© âLes Charmesâ is produced by the small, family-run Domaine Simonin estate in the MĂąconnais region of Burgundy, where around seven hectares of Chardonnay are cultivated using traditional vineyard practices. The wine comes from the âLes Charmesâ climat, a well-regarded site planted on limestone and clay soils that provide excellent drainage and contribute to the wineâs mineral character and balance. The estate focuses on careful vineyard management to preserve fruit purity and express the terroir of Pouilly-FuissĂ©.
Made from 100% Chardonnay, the grapes are gently pressed and fermented in a combination of stainless-steel tanks and oak barrels to retain freshness while adding texture and complexity. The wine is typically aged on its fine lees for around 10â12 months, sometimes with bĂątonnage, which enhances richness and mouthfeel before bottling. Production from the parcel is relatively smallâonly a few thousand bottlesâresulting in a focused, terroir-driven Pouilly-FuissĂ© with layered fruit and subtle oak influence
